- Peel and chop the onion into large slices. Then place the onion in the slow cooker.
- Generously salt and pepper the roast, then set it on top of the onions.
- Pour the can of chipotle peppers over the roast (include the sauce) and both cans of Dr. Pepper.
- Add brown sugar to the juice and stir in.
- Cook on low all day. The longer you slow cook it the more tender it will be. A general rule of thumb is about 8 hours.
