Strawberry Cheesecake Bites

This is a great dessert that is easy for your family or guests to enjoy! It honestly took more time for me to make these than for my children to devour them. I didn’t have a chance to taste one! The kids really loved them! I made another batch and those we gone as quickly as the first! We love to go strawberry picking in the spring and I will make a version of this with all of those little sweet strawberries! I will be sure to make a video of that creation!

Ingredients
  

  • 1 (8 oz) package cream cheese
  • ½ cup confectioners’ sugar
  • 2 tsp vanilla extract
  • 12 large fresh strawberries, hulled
  • 2 Tbsp graham cracker crumbs
  • 2 (1 oz) squares semisweet chocolate chips

Equipment

  • 1 Cutting Board Mats
  • 1 Electric mixer
  • 1 Fruit baller
  • 1 Hand immersion blender with whisk attachment
  • 1 Immersion blender
  • 1 Measuring set
  • 1 Nonstick baking sheet set
  • 1 Silicone whisk set
  • 1 Stainless steel mixing bowl set

Method
 

  1. Line a baking sheet with waxed paper
  2. Beat together the cream cheese, confectioners sugar and vanilla extract in a bowl until smooth
  3. Spoon the mixture into a plastic bag and clip the corner with scissors
  4. Hollow out the strawberries
  5. Pipe the cream cheese filling into each strawberry
  6. Dip in melted chocolate and graham crackers if desired
