Oven Baked Chimichangas

A friend of mine asked me to find a recipe for oven baked chimichangas, and here it is! They were quite tasty! I love to make foods from scratch so you can taste all of the fresh flavors! Everyone in my family really enjoyed this recipe and asked for seconds!

Ingredients
  

  • 2 Tbsp olive oil
  • ½ cup chopped onion
  • 2 cloves minced garlic
  • 2 cups salsa
  • 3 Tbsp water
  • ¼ cup chili powder
  • ½ tsp ground cumin
  • ½ tsp ground cinnamon
  • 1 pound cooked, shredded chicken
  • refried beans
  • cheese
  • flour tortillas

Equipment

  • 1 12-inch nonstick skillet with glass lid
  • 1 2-quart glass baking dish
  • 1 Measuring cups and spoons set
  • 1 Plastic cutting board mats (set of 3)
  • 1 Silicone basting brush
  • 1 Silicone whisk set
  • 1 Stainless steel prep knife

Method
 

  1. Combine olive oil, onion and garlic and saute until tender.
  2. Add salsa and water, mix together
  3. Add chili powder, cumin and cinnamon, mix together
  4. Add chicken and combine, simmer until heated through
  5. Layer tortilla with refried beans, cheese and chicken mixture
  6. Brush with olive oil
  7. Bake 5 minutes at 425 degrees, flip and brush with olive oil and bake another 5 minutes, repeat 3 times and sprinkle cheese on top
